Get a pan and melt a nob of butter into it.
Then add a finely diced onion with some finely diced bacon and brown them off.
Add a bit of sweetcorn and finely diced capsicum(pepper).
Cook for another 2 minutes or so.
Then add some double cream to make it in a sauce
Salt/Pepper and spices to taste (I usually add paprika and thyme)

Get a bowl and put some flour (plain or self raising doesn't matter) into it with a pinch of salt, pepper and spices if you like.
Put the fish fillet into the bowl to coat it all over.
Get a frying pan with a couple of nobs of butter in it.
Fry the fish slowly, once golden brown on one side turn it over and golden brown the other. The flour mix helps it go a bit crispy on the outside.

Once cooked put fish on a plate and pour your creamy bacon and onion sauce on top or on the side.
