I'm surprised no one has mentioned Elton John yet. He's one of my favorite overall artists, as well. I've gotten to see him play this song live, and it's one of my most memorable concert experiences ever. I remember that Davey Johnstone used that cool guitar the night I was there, too: lol
Another pianist that I love to listen to is Bruce Hornsby; Justin Avery's playing reminds me of him:

Storytellers, there's another favorite of mine who probably doesn't come to people's minds when you think of piano, and that's Bruce Springsteen. He's not technically the best player- it's not his primary instrument- but I love listening to him play nonetheless; there is just something about it that touches me. Incident on 57th Street are just stunning, IMO. He wrote all of the
Born to Run album on piano, and this is probably my favorite version of
Thunder Road ever:
I've never been lucky enough to catch him playing piano live- maybe that will change.
